Sweet Potato and Apple Juice

Ingredients:

4 medium-sized sweet potatoes

2 apples

1 carrot

1 pear

¼ inch ginger

a pinch of ground cinnamon

I know you are thinking we have gone crazy using sweet potato in a juice (more when you read it is raw) but go with us here.

Sweet potatoes have more natural sugar than the normal potato, which makes them an ideal ingredient for juices.

There are also full of potassium and fiber. They also don’t contain solanine.

This is a potential harmful enzyme that other potatoes contain when raw.

Because of this, you can eat sweet potatoes raw.

 

If you combine sweet potatoes with apples, carrots, and pears you will get plenty of Vitamin A, C and K, not forgetting B-12.

Your juice will also have magnesium, known to help with migraines and fight depression.

 

A bit of ginger and cinnamon will give the juice a warm, Asian flavor. If you don’t have fresh ginger, powdered ginger will work well.

Other spices you could try instead of the ginger and cinnamon are nutmeg and/or turmeric.

None of these fruits or vegetables needs to be peeled but you should wash them first.

All you need to do is cut the food into cubes (unless your juicer doesn’t require it) and put all the ingredients in a blender.

If you feel that the juice is too thick, you can add some water.

You will get 6 glasses of juice without adding water.

If you want to impress your visitors, cut some green and red apples into small cubes.

Leave the skin on so you can see the contrasting colors.

Add a tablespoon of the cubed apples to the glass.
